Overview
Edwin Noreña is an alchemist, known for pioneering advanced coffee processing approaches, in particular co-fermentation, where there coffee is sealed in a tank with other fruit or flowers during the fermentation process before being dried.
Edwin approaches his co-fermented coffees with an eye towards balance and complementary flavors. This particular Pink Bourbon lot is co-fermented with Galaxy Hops, which brings out some lovely floral notes. Unlike many co-ferments, this one isn't too overbearing. It's complicated and interesting, but still tastes like coffee.
Besides running his own coffee farm, Edwin is a coffee consultant, certified Q grader, Q processor, and Cup of Excellence Judge. He holds degrees in agroindustrial engineering and international business. His farm, Finca Campo Hermoso, won the Cup of Excellence in 2021, and is a part of the Santuario Project, a network of research and development farms that help other producers learn advanced cultivation and processing techniques.
